Dum biryani is the signature dish of Hyderabad, which was introduced to India after the new ruler of Hyderabad, Nizam-Ul-Mulk, took over the throne. Nizams were known for their lavish lifestyle and food appreciation, adopted the Mughlai culinary style, and merged it with local flavors. The origin of Hyderabadi biryani is still undiscovered but it has undergone many changes across centuries, cultures, ingredients, and cooking methods. And it is now evident why Biryani became the favorite of all.
